
Vodka Baba
Baba, without the rum but not without spirit: soaked in a Le Philtre vodka syrup. A recipe created by Yoni Saada.

Ingredients
The base:
- 50 g powdered sugar
- 20 g melted butter
- ½ sachet baking powder
- 1 egg
- 50 g flour
- Red berries (raspberries, blackberries, strawberries)
The syrup:
- 80 g sugar
- 5 cl Le Philtre vodka
- 15 cl water
Preparation
- Preheat the oven to 180 °C (thermostat 6) and butter a baba mold.
- Mix the sugar and whole egg with an electric mixer, then add the melted butter, flour, and baking powder. Mix until the batter is smooth.
- Pour the batter into the mold and bake for 15 minutes. Lower the temperature to 150 °C (thermostat 5) and continue baking for another 15 minutes.
- Prepare the syrup: In a saucepan, bring the water and sugar to a boil, then add Le Philtre vodka. Cook for 3 minutes over low heat, barely simmering.
- Unmold the baba onto a deep dish. Using a ladle, pour the syrup over the cake until it is well soaked, and also over the red berries.
