
Clams & Bacon Bits
Clams deglazed with vodka, onion and bacon condiment, and dill oil. A recipe by Alexia Duchêne.

Ingredients
- Clams
- ½ onion
- A bunch of dill
- Sunflower oil
- 2-3 slices of bacon (lardo, pancetta, guanciale or similar)
- Thyme
- Garlic
- Le Philtre Vodka
- Lemon
Preparation
- Desalt the clams under running water for about 20 minutes.
- Finely dice the onion.
- Finely dice the bacon.
- Sauté the onion, then add the bacon.
- Make dill oil: blend the leaves (without the stems) with a little oil in a blender until you get a vibrant green oil.
- Cook the clams in a pot with a drizzle of oil, a sprig of thyme, and garlic.
- Deglaze with a good shot of vodka, then finish by adding the onion-bacon condiment and a little dill oil. Add a squeeze of lemon and serve immediately.
The pairing: as an aperitif, with a chilled glass of Le Philtre. Obviously.
